嘉義布袋的洲南鹽場為是1824年,由政府闢建的天然日晒鹽場,仍保留傳統日晒產鹽的方式,霜鹽為洲南鹽場中,最大眾入門的產品,主要訴求以家庭以及日常使用,最適合料理過程中加入,基本調味;是料理萬用款。夏日雨季結束後入秋,氣候逐漸穩定;節氣霜降前後,開始引海水曬鹽。冬季日照短、氣溫低、結晶慢,海鹽顆粒結實;海水中各種礦物質帶來風味,回甘不死鹹。
產季:11月〜隔年3月
The Chaunan Salt Field in Budai, Chiayi is a natural sun-dried salt field established by the government in 1824. It still retains the traditional method of sun-dried salt production. Frost salt is the most popular product in the Chaunan Salt Field. It mainly appeals to families and daily life. It is most suitable for adding in the cooking process and basic seasoning; it is a versatile product for cooking. After the summer rainy season ends and autumn enters, the climate gradually stabilizes; before and after the frost falls in solar terms, seawater begins to be diverted to dry salt. In winter, the sunshine is short, the temperature is low, the crystallization is slow, and the sea salt particles are firm;
